Ingredients:

Shells: Manicotti Shells or Jumbo Shells
4 Cups shredded mozzarella cheese, divided
8 Ounces soft cream cheese
Chives

1/2 Cup grated Parmesan cheese

Cook shells in a large pot of boiling water according to package directions. Drain and rinse with cold water; drain again.

Preheat oven to 350 degrees. Mix 3 cups mozzarella with soft cream cheese. Mix in chives to your liking. (I have only tried freeze dried chives, but if you have fresh chives, I'm sure you could use those as well.)

Bake for 15 minutes.

Sprinkle with Parmesan. Bake for 10 minutes longer.

This is a good meal to make during the day when you aren't too rushed and put into the fridge until you need to bake it. YuMmY!!!

Saucy Mexican Chicken

1 lb Boneless skinless Chicken breast
1 (16 oz) Jar Think & Chunky Salsa
1 can (15 oz) Black beans, rinsed
1 cup 2% shredded mild cheddar cheese

Saucy Mexican Chicken

Cook chicken in nonstick skillet on medium-high heat 4 min. on each side or until browned on both sides.

Add salsa and beans. Bring to boil -cover. Simmer on medium-low heat 5 min. or until chicken is done.

Top with cheese. Remove from heat. Let stand, covered, 5 min. or until cheese is melted.

*Note* I normally double everything but the beans so that I can add enough chicken for my whole family. I typically serve this with brown rice & steamed broccoli. I also add a bit of light butter, salt & some of the shredded cheese to the steamed broccoli.

Enjoy!
